Crostini toasts

Ingredients

  • 4 medium slices white bread, 800 g loaf (18 Sins)
  • 1 garlic clove, peeled and halved
  • Fry Light, for spraying

1. Trim the crusts from the bread and cut each slice into 4 pieces. Toast the bread on one side only under a preheated hot grill until lightly golden.

2. Spray the untoasted side of each piece of bread with Fry Light and pop back under the grill until crisp and golden. 3. Rub the pieces lightly with the cut garlic clove to impart a marvellous garlic aroma, then top with one of the suggested toppings listed opposite.

 

Egg and cress topping

Peel and mash one hard-boiled egg with 1 level teaspoon reduced calorie mayonnaise (1 Sin). Mix with 28 g/1 oz finely chopped sun-dried tomato without oil (1/2 Sin). Season to taste Pile on to the 16 crostini and top with a few sprigs of mustard and cress.

Sins per serving: Negligible on Original and Green


Tomato and anchovy topping

Thinly slice 3 ripe tomatoes and place a slice on each of the 16 crostini. Grill for a few minutes, until slightly charred. Chop 4 anchovy fillets in oil (1/2 Sin on Original; 1 1/2 Sins on Green) and use to top the crostini. Finish with a sprinkling of chopped parsley or chives.

Sins per serving: Negligible on Original and Green


Scrambled egg and chives topping

Beat 2 large eggs in a bowl with some salt and pepper and 2 tablespoons snipped chives. Scramble the eggs in a non-stick pan sprayed with Fry Light, stirring constantly over a low heat until creamy and almost set. Serve piled on to the 16 crostini.

Tsatsiki and mint topping

Mix 5 tablespoons very low fat natural yogurt with 2 tablespoons finely diced cucumber and 1 teaspoon chopped mint. Season to taste and add a dash of lemon juice and a little crushed garlic. Spread on the 16 crostini. Slice 4 stuffed olives (1 Sin) and sprinkle on top of the crostini.

Sins per serving: Negligible on Original and Green


Smoked salmon topping

Mix 57 g/2 oz chopped smoked salmon (4 Sins on Green) with 4 tablespoons very low fat natural fromage frais. Place a small spoonful on each crostini and top with snipped chives and some grated lemon zest.
