200 g chicken,


beef and ham,

100 g whole-wheat bread,

75 g butter,

Vi cup sour cream,

2 egg yolks,

1 carrot,

1 parsley root,

1/2 celery root,

1 onion,

2 l stock,

parsley sprig,

pepper to taste.


Separate the beef and veal from bones. Chop the bones into small pieces. Fill casserole with cold water and cook bones together with meat and a whole chicken. When chicken is done, remove it from stock, separate meat from bones and continue cooking them together with other bones for 2 to 3 hours. Strain stock.


Mix the cooked chicken meat with raw veal and beef, ham, pieces of carrots, parsley root, celery and run through meat grinder using the finest attachment. Braise the obtained mixture in butter, add whole-wheat bread soaked in stock, salt, allspice, cook for several minutes. Season with sour cream mixed with raw egg yolk and butter. Serve in a soup plate, sprinkle with finely chopped parsley.
