Crispy stir-fried mushrooms


  • 1 egg
  • 1 egg yolk
  • 1/2 tablespoon finely chopped parsley
  • 500 g (1 lb) open cup mushrooms, thickly sliced
  • 5 tablespoons dry white breadcrumbs
  • 25 g (1 oz) butter
  • 1 garlic clove, halved
  • salt and freshly ground black pepper

1. Beat the egg well with the egg yolk and chopped parsley, and season to taste. Dip the mushroom slices in the egg mixture and coat in the dry breadcrumbs.

2. Melt the butter in a large frying pan, fry the garlic until golden brown, then remove and discard. Add the mushrooms and quickly stir-fry until golden brown on all sides. Serve immediately with a flavoured mayonnaise and crusty French bread.
