Baked jacket potatoes


  • sea salt and freshly ground black pepper
  • 1 x 227g/8oz baking potato (6 Sins on Original)
  • 2 tablespoons very low fat natural yogurt

1. Wash and scrub the potato if it is caked in soil and dry it thoroughly. Prick the potato all over with a fork or push a thin metal skewer through it.

2. Place the potato on a baking sheet and bake in a preheated oven at 200°C, 400°F, Gas Mark 6 for about 1 - 1 1/4 hours.

3. The potato is ready when the skin is crisp and it yields slightly when pressed gently with your fingers. If you have cooked the potato with a skewer inserted, it should pull out easily.

4. If using a microwave oven, prick the potato with a fork and place on double-thickness kitchen paper. Cook on HIGH for 5 minutes. Stand for 4-5 minutes before cutting the potato open.

5. Either cut a cross in the centre of the potato and push upwards around it with the fingers of both hands, or slice off part of the potato to form a "lid" and scoop out the soft flesh.

6. Using a fork, mash the potato flesh with the yogurt and season to taste with salt and pepper. Stuff the mashed potato back into the shell or mix with one of the following fillings or toppings.
