Easy Peasants Paella
Ingredients
- 1 large onion, chopped
- 3 tomatoes, chopped
- 350g pack Quorn Pieces
- 397g/14 oz can butter beans, drained
- 397g/14 oz can runner beans, drained
- 227g/8 oz pudding rice
- salt & ground black pepper
- 568ml/1 pt hot water
- saffron or yellow food colouring
Dry fry the onion, tomatoes and Quorn Pieces in a large heavy based saucepan until tender. Stir in the butter beans, runner beans and pudding rice adding a little water if necessary so that the mixture remains moist. Season to taste. Add the hot water, saffron or colouring to the mixture and simmer for 25-30 minutes until the rice is cooked, do not stir again. Serve with a fresh green salad.
