Minced Quorn & Bean Pie


  • Fry Light, for spraying
  • 1 small onion, chopped
  • 350g pack Quorn Mince
  • 397g/14 oz can mixed beans in spicy sauce
  • 908g/2 lb potatoes, thickly sliced

Spray a non-stick saucepan with the Fry Light and cook the onion for 5-10 minutes until soft and golden. Stir in the Quorn Mince and beans and simmer for 5 minutes, adding a little water if necessary so that the mixture remains moist. Transfer the mixture into an ovenproof dish. Meanwhile, parboil the potatoes in a saucepan of boiling water for 5 minutes, drain and dry. Place the potato slices on top of the Quorn mixture and spray the top with Fry Light. Bake in a preheated oven at 200°C, 400°F Gas Mark 6 for 20-25 minutes until golden brown. Serve with green vegetables.
