* 1 1/2 pounds goat cheese, softened
* 2 teaspoons rosemary, chopped
* 2 teaspoons chopped thyme
* 1/4 teaspoon crushed red peppers
* 1/4 teaspoon hot paprika
* 1/2 cup pine nuts
* 20 baby artichoke hearts (canned is ok)
* 1 cup of nicoise olives
* 1 quart of olive oil


Instructions

1. Toast the pine nuts in a 350 degree oven for 8 minutes or until fragrant.
2. Remove from oven and let cool.
3. Using your stand mixer with the paddle attachment, mix the softened goat cheese, pine nuts, thyme, rosemary, red pepper flakes, and paprika.
4. Taste for salt.
5. Once everything is well blended, scoop the cheese out of the bowl one tablespoon at a time and roll into balls.
6. Pour a small amount of oil into a large bowl and then add the artichoke hearts and cheese balls. Cover with the remaining oil.
7. Cover with plastic wrap and let marinade overnight.
8. Serve with toasted baguette slices.
