Hot stir-fried broccoli


  • 1 teaspoon oil (2 Sins)
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 1 hot red chilli, deseeded and finely chopped
  • 1 x 2.5 cm/1 in piece fresh root ginger, peeled and chopped
  • 1 yellow pepper, deseeded and very thinly sliced
  • 454 g/1 lb broccoli, broken into florets
  • dash of soy sauce
  • salt and freshly ground black pepper

1. Heat the oil in a wok or a deep frying pan until it is smoking hot. Add the onion, garlic, chilli, ginger and yellow pepper, then reduce the heat to low and stir-fry for 2—3 minutes, until the onion is golden and starting to soften.

2. Add the broccoli and stir-fry for 5-6 minutes, until the broccoli is just tender and turns bright green — it should not be hard. Test it by inserting the sharp point of a knife.

3. just before serving, add a dash of soy sauce and season to taste, if wished, with salt and pepper.
