In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if there are a few lumps; overmixing can make the pancakes tough.
Heat a non-stick skillet or griddle over medium heat. You can also use a well-seasoned cast-iron skillet or lightly grease the pan with butter or oil.
Once the pan is hot, ladle about 1/4 cup of pancake batter onto the skillet for each pancake. You can make them larger or smaller, depending on your preference.

Flip the pancakes and cook for another 1-2 minutes on the other side until they are golden brown and cooked through.
Remove the pancakes from the pan and repeat the process with the remaining batter.
