Fish and chips is a classic and delicious British dish that consists of battered and fried fish fillets served with crispy deep-fried potato chips (fries).

Here's a traditional recipe to make fish and chips at home:
Ingredients:
For the fish:
4 white fish fillets (such as cod, haddock, or Pollock), about 6–8 ounces each
1 cup (0.24 l) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup (0.24 l) cold sparkling water or beer (sparkling water gives a lighter batter, while beer adds flavor)
Vegetable oil, for frying
For the chips:
4 large russet potatoes, peeled and cut into thick fries
Vegetable oil, for frying
Salt, to taste
Optional sides and garnish:
Peas (mushy peas or garden peas)
Lemon wedges
Tartar sauce
Instructions:
Preheat the oven to 200 °C (392 °F) to keep the cooked fish warm while frying the chips.
Prepare the fish:
In a large bowl, mix the flour, baking powder, salt, and black pepper.
Slowly add the cold sparkling water or beer while whisking until you have a smooth batter. The batter should have a consistency similar to pancake batter.
Heat a deep fryer or a large, deep, heavy-bottomed pot with vegetable oil to around 180 °C to 190 °C (374 °F to 375 °F).
Dip each fish fillet into the batter, ensuring it's fully coated. Let any excess batter drip off before carefully placing the fish into the hot oil. Fry the fish in batches to avoid overcrowding the fryer or pot. Fry for about 4–6 minutes, turning once, until the batter is golden and crispy, and the fish is cooked through. Remove the fish from the oil and drain on a plate lined with paper towels. Keep the cooked fish warm in the preheated oven while you fry the chips.
Prepare the chips (fries):
Rinse the cut potato fries in cold water to remove excess starch. Pat them dry with a paper towel.
In batches, fry the potato fries in the hot oil for about 4–6 minutes, or until they are golden and crispy. Remove them from the oil and drain on a plate lined with paper towels.
Season the hot chips with salt to taste.
Serve the fish and chips:
Plate the fish and chips together, optionally accompanied by a side of peas.
Serve with lemon wedges and tartar sauce for dipping, if desired.
